Example Beef Order

The following is an example of the meat that can be expected from a quarter of one of our grass fed animals.  This example is based on:

bullet

 a steer which weighed 1210 pounds at harvest (1/4 of which would weigh 302.5 pounds, live weight)

bullet

steaks were cut to 3/4 inch thickness

bullet

 ground beef was 80% lean

bullet

 example is of a split quarter, which includes half of the meat from the front quarter and half from the rear quarter

bullet

the example quarter weighed 124 pounds of sharp frozen beef for the freezer (processed weight) wrapped in white butcher paper

chuck roasts (total 7#)            8 rib steaks
rolled rump roast (5-6#)         6 T-bone steaks
sirloin tip roast (3-4#)             6 sirloin steaks
